Things don't work the same way in Star Wars than they do in real life. In the context of the story, it's explained that Rey's skill with her staff translated well into lightsaber skill.
You may not like that explanation even though it's not that unreasonable as your example, the styles might be different but some principles like anticipating an opponent's move and range control are the same , but it's canon and we have to go with it, as are the sources that explain that TFA Kylo would beat ESB Luke and that Rey accessed Kylo's training through the mind probe.
I'm aware, but that doesn't change the fact that some things just defy common sense and we can dismiss a source if its claims are illogical. Would you endorse a source that said Phasma is adroit in space brawling because she has trained herself to not need oxygen?

Those principles apply to any form of combat, they don't mean you can easily transition from fencing to staff usage or kick boxing to grappling. As I said before: I doubt that hypothetical head to heads have ever been canon. I don't dispute this.
Though, that doesn't make her as good as him. Anyone can read up on the various manuevers of swordfighting, and though that leaves you better off than the average Joe, if you try to engage a trained swordsman you will fail spectacularly because you haven't committed the essentials to muscle memory, you haven't practiced form, or speed, etc, and you won't have the ability to think and react on the fly like they can, because they've honed their knowledge for years.
We see bombs drop in space even though there's no gravity, we see lightsabers clash with momentum as if they were metal bars, etc. It's popcorn fiction, not that big of a deal. Rey translating well her quarterstaff skill to lightsaber skill might be contrived, but it's still a story fact explained in official sources. Rey in a tough fight. It doesn't make sense to discuss skill in using Lightsaber in Sequels as there is no skill at all.
Reverse grip in the real world is not very effective one of the few advantages would be being able to strike more easily using Pommel Rey is powerful, but i'm cool with either or winning. I am siding with Rey winning but if a proper argument can be made for Ventress i can be convinced.
